If it helps, I get most of my greens in smoothies and green juices, as I find it very challenging for me personally to get a lot in salads. Hi Daisyduke, Try more greens--about a pound a day or more--and exercising more (if you don't exercise already). I think they'll help. If you're eating mono meals all the time and something's not working, I suggest not doing a mega-mono meal, i.e., the 2-week orange juice fast. Tabitha-- Do you know how many calories you are currently getting? I found that when I first started eating raw that I didn't eat enough because of the large volumes of foods, in part because I didn't realize how much more food volume-wise I needed to eat and in part because my stomach hadn't adjusted and expanded enough to accommodate the large volume of food. Arugula: Whoa! Where does all the zinc, iron, calcium, and sodium come from! I only get half as much zinc and sodium (though I get double the calcium and iron), and I eat a handful of nuts and seeds and 1.5 pounds of greens a day, and the rest is fruit. It's true that you can't produce enough vitamin D in the wintertime, but if you get enough sun in the summertime, you can store up enough vitamin D that will last you through the wintertime. P.S. I forgot to say, some types of anemia (i.e., pernicious anemia) are helped with a B12 supplement--this is especially true for the elderly. The best kind is the methylcobalamin form of B12, but really any B12 supplement will do.
